What can you do with overripe bananas?🍌
Sometimes we receive bananas at peak ripeness, but they’re still perfect to enjoy while helping prevent food waste.
This month we’re sharing two recipes: banana ice cream and pancakes, each made with just one other ingredient. Fun to make with kids and even better with a handful of chocolate chips or nuts!

Banana Pancakes
Ingredients
Overripe Banana
2 eggs, whisked in a small bowl
Oil or Butter
Directions
- In a large bowl, mash the banana with a fork until smooth. Ideally, there should be no large lumps
- Gradually add the eggs, mixing continuously
- Heat a nonstick pan over medium heat. Add a small amount of oil or butter, to prevent sticking.
- Drop batter into the pan, roughly 2-3 tablespoons at a time, when oil or butter is hot. Cook until golden on each side, 1-2 minutes.
- Top with fresh fruit or syrup and serve while hot.
Optional Ingredients to Add to Batter Before Frying
â…› t. baking powder, for fluffier pancakes
ÂĽ t. cinnamon
1-2 T. cocoa, for chocolate pancakes
1-2 T. peanut butter

Banana Ice Cream
Ingredients
Overripe Bananas
Milk (cow or plant based)
Toppings optional (chocolate chips, chopped nuts, sprinkles, chocolate sauce, fruit, coconut, caramel sauce, or my favorite: chocolate chips, white chocolate chips, and chopped walnuts for a healthier Chunky Monkey)
Directions
- Peel overripe bananas and chop into pieces. Then put in a freezer-safe container and freeze for several hours, or overnight.
- Using blender, blend frozen banana pieces, adding a small amount of milk, as needed, to keep the blender moving.
- Periodically turn off blender and scrape sides.
- Blend until the bananas are smooth, like ice cream.
- Eat immediately for a soft serve treat, or refreeze to allow the dessert to firm up.
- Eat plain or top with your favorite toppings
